Dairy-Free Sausage & Potato Soup

A hearty, flavorful potato soup made with Italian sausage, potatoes, carrots, celery, spinach, and fresh herbs. A portion of the potatoes is blended into the broth to create a naturally creamy texture without dairy, flour, or coconut milk.

Dairy-Free Sausage & Potato Soup

Ingredients
  

  • 1 lb Italian sausage mild or hot
  • 1 tablespoon olive oil if needed
  • 1 medium yellow onion diced
  • 3 carrots peeled and diced
  • 3 celery stalks diced
  • 4 cloves garlic minced
  • 2 lbs Yukon Gold or yellow potatoes peeled or scrubbed and cut into 1-inch pieces
  • 6 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt plus more to taste
  • 1 bay leaf
  • 4 cups fresh spinach roughly chopped
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard optional but highly recommended
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. Brown the sausage
  2. Remove the sausage from its casing if necessary. Heat a large Dutch oven or soup pot over medium-high heat and crumble in the sausage.
  3. Cook for about 5–7 minutes, breaking it into small pieces, until browned. Remove some excess grease if there is a lot, leaving enough to flavor the vegetables.
  4. Build the flavor
  5. Add the onion, carrots, and celery. Cook for about 6–8 minutes, stirring occasionally, until the vegetables begin to soften.
  6. Add the garlic, smoked paprika, Italian seasoning, thyme, black pepper, and red pepper flakes. Cook for another minute.
  7. Add the potatoes and broth
  8. Add the potatoes, chicken broth, and bay leaf.
  9. Bring to a boil, then reduce to a gentle simmer. Cover partially and cook for about 15–20 minutes, until the potatoes are very tender.
  10. Make it creamy
  11. Remove about 2 cups of the soup, making sure to get plenty of potatoes and some broth.
  12. Blend until smooth using an immersion blender, regular blender, or food processor. Return the blended mixture to the pot.
  13. This is the trick that makes the soup creamy without cream, milk, flour, or a dairy-free substitute.
  14. Add the spinach
  15. Stir in the spinach and cook for 2–3 minutes, just until wilted.
  16. Finish the soup
  17. Remove the bay leaf.
  18. Stir in the parsley, lemon juice, and Dijon mustard if using. Taste and adjust the salt and pepper.
  19. Let it sit for about 5 minutes before serving.
