Carob Mug Cake (Healthy, Low Sugar)

Ingredients:

  • 3 tbsp whole wheat flour or almond flour
  • 2 tbsp carob powder
  • 1/4 tsp baking powder
  • 1 large egg
  • 2 tbsp unsweetened applesauce
  • 1 tbsp maple syrup
  • 1 tbsp butter, melted (or avocado oil)
  • 1/4 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. In a microwave-safe mug, mix the flour, carob powder, baking powder, and salt.
  2. In a separate small bowl, whisk together the egg, applesauce, maple syrup, melted butter (or avocado oil), and vanilla extract.
  3. Pour the wet ingredients into the mug with the dry ingredients. Stir until well combined and no lumps remain.
  4. Microwave on high for about 60-90 seconds. Start checking at 60 seconds as cooking time may vary depending on your microwave. The cake is done when it has risen and is firm to the touch. Be careful not to overcook. Let it cool for a minute before enjoying.
