Pulled Pork Fried Rice

(15 min, one-pan meal)

Flavor: Savory, smoky, a little sweet and spicy.
Great for: Quick dinners or lunches.

Ingredients

  • 1–2 cups leftover pulled pork
  • 3 cups cooked rice (day-old or chilled works best)
  • 2 eggs (optional, skip for egg-free)
  • 1 cup mixed vegetables (carrots, peas, corn, or whatever you have)
  • 2–3 Tbsp coconut aminos
  • 1 Tbsp butter or avocado oil
  • 1 tsp garlic, minced
  • ½ tsp ginger (fresh or powdered)
  • Green onions or cilantro, chopped (for topping)

Instructions

  1. Heat oil or butter in a large skillet or wok over medium-high heat.
  2. Add garlic and ginger; cook 30 seconds until fragrant.
  3. Add veggies and sauté 2–3 minutes.
  4. Push vegetables aside, crack in eggs if using, and scramble.
  5. Add rice and pulled pork. Drizzle coconut aminos over top. Stir-fry until everything is hot and slightly crisp (~5 min).
  6. Finish with green onions.
