Almond Biscotti (Low Sugar)

Ingredients

  • 2 cups whole wheat pastry flour (or all-purpose if you prefer lighter)
  • 1 tsp baking powder
  • ¼ tsp salt
  • ⅓ cup coconut sugar (or light brown sugar)
  • 2 Tbsp honey or maple syrup
  • 2 eggs (room temp)
  • 2 Tbsp olive oil (or melted butter)
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • ¾ cup chopped almonds (or pistachios, hazelnuts, etc.)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a large bowl, whisk flour, baking powder, salt, and coconut sugar.
  3. Whisk wet ingredients: In another bowl, beat eggs with olive oil, honey (or maple syrup), vanilla, almond extract, and orange zest.
  4. Combine wet and dry ingredients, then fold in nuts. Dough will be sticky.
  5. Shape into a log: On the baking sheet, shape dough into a 12″ x 3″ log. Smooth with damp hands.
  6. First bake: Bake 25–30 min until golden and firm. Cool 10 min.
  7. Slice: With a serrated knife, cut into ½-inch slices on a slight diagonal.
  8. Second bake: Lay slices cut side up. Bake 10 min per side, until crisp.
  9. Cool completely before storing in an airtight container.
