SCD Creamy Banana Egg Custard (High-Protein & Texture-Friendly)


🟡 Ingredients (Serves 2–3):

  • 2 ripe bananas (with brown spots)
  • 3 large eggs
  • 1/4 cup homemade SCD yogurt (or substitute with coconut milk if dairy-free)
  • 1/2 tsp cinnamon (optional)
  • 1/2 tsp vanilla extract (optional, alcohol-free or homemade)
  • Pinch of salt
  • Optional: 1–2 tsp honey (if needed for sweetness — not for children under 1)

🧁 Instructions:

  1. Preheat oven to 325°F (160°C).
  2. Blend all ingredients in a blender or use an immersion blender until completely smooth.
  3. Pour into ramekins or a small baking dish.
  4. Place the ramekins in a deep baking dish and pour hot water around them to make a water bath (prevents rubbery texture).
  5. Bake for 35–40 minutes, or until just set but still a little jiggly in the center.
  6. Cool slightly, then refrigerate. Serve warm or chilled, depending on your child’s preference.
