Asian-Inspired Chicken and Rice Bowl

Ingredients:

  • 2 chicken breasts, diced
  • 1 cup wild rice or white rice
  • 2 cups frozen mixed vegetables
  • 1/4 cup soy sauce
  • 2 tbsp sesame oil (or olive oil)
  • 1 tbsp honey or brown sugar
  • 1 tsp garlic powder
  • 1 tsp ginger powder (or fresh ginger, grated)
  • 1 tbsp sesame seeds (optional)
  • Green onions (optional, for garnish)

Instructions:

  1. Cook the Rice: Cook the wild or white rice according to package instructions.
  2. Prepare Chicken: In a pan, heat sesame oil over medium heat. Add the diced chicken and cook until browned.
  3. Make the Sauce: Mix soy sauce, honey, garlic powder, and ginger powder in a bowl. Pour over the chicken and simmer for 2-3 minutes.
  4. Add Vegetables: Add the frozen mixed vegetables to the pan and cook until tender.
  5. Assemble: Divide the rice into meal prep containers, top with the chicken and vegetables, and garnish with sesame seeds and green onions.
