This moist and delicious SCD banana bread is made with ripe bananas, almond flour, and honey for a gut-healing, grain free, gluten free treat. Perfect for breakfast, snacks, or dessert on the Specific Carbohydrate Diet.
Ingredients
- 3 very ripe bananas (mashed until smooth)
- 3 large eggs
- ¼ cup honey (adjust to taste)
- ¼ cup melted coconut oil or butter (SCD-legal)
- 1 tsp vanilla extract (SCD-legal, no added sugar)
- 2 ½ cups almond flour (finely ground)
- 1 tsp baking soda (SCD-legal)
- ½ tsp cinnamon
- Pinch of salt
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Prep
- Preheat oven to 350°F (175°C).
- Grease a standard loaf pan with coconut oil or line with parchment.
- Mix Wet Ingredients
- In a large bowl, mash bananas.
- Whisk in eggs, honey, melted oil/butter, and vanilla until smooth.
- Mix Dry Ingredients
- In a separate bowl, stir together almond flour, baking soda, cinnamon, and salt.
- Combine
- Fold dry ingredients into wet until just combined.
- Stir in optional nuts.
- Bake
- Pour batter into prepared loaf pan.
- Bake 40–50 minutes, or until golden and a toothpick comes out clean.
- Let cool fully before slicing (important so it sets well).
