Ingredients
- 2 cups whole wheat pastry flour (or all-purpose if you prefer lighter)
- 1 tsp baking powder
- ¼ tsp salt
- ⅓ cup coconut sugar (or light brown sugar)
- 2 Tbsp honey or maple syrup
- 2 eggs (room temp)
- 2 Tbsp olive oil (or melted butter)
- 1 tsp vanilla extract
- 1 tsp almond extract
- ¾ cup chopped almonds (or pistachios, hazelnuts, etc.)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix dry ingredients: In a large bowl, whisk flour, baking powder, salt, and coconut sugar.
- Whisk wet ingredients: In another bowl, beat eggs with olive oil, honey (or maple syrup), vanilla, almond extract, and orange zest.
- Combine wet and dry ingredients, then fold in nuts. Dough will be sticky.
- Shape into a log: On the baking sheet, shape dough into a 12″ x 3″ log. Smooth with damp hands.
- First bake: Bake 25–30 min until golden and firm. Cool 10 min.
- Slice: With a serrated knife, cut into ½-inch slices on a slight diagonal.
- Second bake: Lay slices cut side up. Bake 10 min per side, until crisp.
- Cool completely before storing in an airtight container.
