🟡 Ingredients (Serves 2–3):
- 2 ripe bananas (with brown spots)
- 3 large eggs
- 1/4 cup homemade SCD yogurt (or substitute with coconut milk if dairy-free)
- 1/2 tsp cinnamon (optional)
- 1/2 tsp vanilla extract (optional, alcohol-free or homemade)
- Pinch of salt
- Optional: 1–2 tsp honey (if needed for sweetness — not for children under 1)
🧁 Instructions:
- Preheat oven to 325°F (160°C).
- Blend all ingredients in a blender or use an immersion blender until completely smooth.
- Pour into ramekins or a small baking dish.
- Place the ramekins in a deep baking dish and pour hot water around them to make a water bath (prevents rubbery texture).
- Bake for 35–40 minutes, or until just set but still a little jiggly in the center.
- Cool slightly, then refrigerate. Serve warm or chilled, depending on your child’s preference.
