Ground Beef Mongolian Noodles (Sugar Free, Dairy Free)



Ingredients:
– 1 lb ground beef
– 8 oz rice noodles or shirataki noodles (for lower carbs)
– 1/4 cup vegetable oil
– 4 cloves garlic, minced
– 1 tbsp grated ginger
– 1/2 cup soy sauce (or coconut aminos for lower sodium)
– 1/4 cup erythritol or monk fruit sweetener
– 1/2 cup water
– 2 green onions, sliced

Instructions:

1. Cook noodles according to package instructions. Drain and set aside.

2. Heat oil in a large skillet or wok over medium-high heat. Add beef and cook until browned, about 5-7 minutes. Remove beef and set aside.

3. In the same skillet, add garlic and ginger. Sauté for 30 seconds until fragrant.

4. Add soy sauce (or coconut aminos), erythritol or monk fruit sweetener, and water. Stir and bring to a simmer.

5. Return beef to the skillet and simmer for 2-3 minutes until sauce thickens.

6. Add cooked noodles to the skillet and toss to coat with the sauce.

7. Garnish with sliced green onions and serve hot.
