Mediterranean Chicken Marbella

Ingredients:

  • 4-6 bone-in, skin-on chicken thighs or a whole chicken, cut into pieces
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1/2 cup pitted prunes
  • 1/4 cup pitted green olives
  • 1/4 cup pitted black olives
  • 1/4 cup capers with some brine
  • 3-4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 1/2 cup brown sugar
  • 1/2 cup white wine
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Marinate the Chicken:
  • In a large bowl, combine the red wine vinegar, olive oil, minced garlic, chopped onions, dried oregano, and a pinch of salt and pepper. Add the chicken pieces and coat them with the marinade. Cover the bowl and refrigerate for at least 2 hours, or overnight for the best flavor.
  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Baking Dish:
  • In a large baking dish, arrange the marinated chicken pieces in a single layer. Add the prunes, green olives, black olives, capers (with some brine), and bay leaves around the chicken.
  1. Sprinkle with Sugar and Pour Wine:
  • Evenly sprinkle the brown sugar over the chicken and the fruits. Pour the white wine over everything.
  1. Bake:
  • Place the baking dish in the preheated oven and bake for about 45-60 minutes, or until the chicken is cooked through and the skin is browned and crispy.
  1. Garnish and Serve:
  • Before serving, remove the bay leaves. Garnish the dish with fresh chopped parsley. Serve the Chicken Marbella with the sweet and savory sauce from the baking dish.

Notes:

  1. Low-Carb Diet: You can reduce the carb content by limiting the amount of sugar used and opting for fewer prunes. Additionally, you can serve it with low-carb sides, like cauliflower rice or roasted vegetables, to make it more compatible with a low-carb diet.
  2. Paleo Diet: With some modifications, Chicken Marbella can be made paleo-friendly. Use honey or maple syrup as a sweetener instead of brown sugar, and adjust the fruit and olive types to ensure they align with paleo guidelines.
  3. Whole30 Diet: To make this dish Whole30 compliant, you should avoid using sugar or wine. Substitute with Whole30-approved sweeteners and vinegar.
  4. Low-Sugar Diet: Reduce the amount of sugar used in the recipe or use a sugar substitute if you’re following a low-sugar diet.
