Ingredients:
- 1 block of soft tofu, drained but not pressed
- 1/2 cup of canned coconut milk
- 1/2 cup of 100% pure maple syrup
- 1/2 cup of unsweetened cocoa powder
- 2 tablespoons of peanut butter
- 1 teaspoon of vanilla extract
- 1 teaspoon of salt
Instructions:
- In a food processor or high-powered blender, combine the soft tofu, coconut milk, pure maple syrup, unsweetened cocoa powder, peanut butter, vanilla extract, and salt.
- Puree the mixture until it becomes very smooth, scraping down the sides as needed to ensure even blending.
- Divide the creamy mixture among 4 to 6 ramekins or small bowls.
- Allow the pudding to chill in the refrigerator for 30 minutes or more to set.
