Vegan Chocolate Mousse

Ingredients:

  • 1 block of soft tofu, drained but not pressed
  • 1/2 cup of canned coconut milk
  • 1/2 cup of 100% pure maple syrup
  • 1/2 cup of unsweetened cocoa powder
  • 2 tablespoons of peanut butter
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of salt

Instructions:

  1. In a food processor or high-powered blender, combine the soft tofu, coconut milk, pure maple syrup, unsweetened cocoa powder, peanut butter, vanilla extract, and salt.
  2. Puree the mixture until it becomes very smooth, scraping down the sides as needed to ensure even blending.
  3. Divide the creamy mixture among 4 to 6 ramekins or small bowls.
  4. Allow the pudding to chill in the refrigerator for 30 minutes or more to set.
