Chickpea “Cookie Dough” Energy Bites

Ingredients:

  • 1 can (15 ounces) of chickpeas, drained, rinsed, and patted dry
  • 1/3 cup of oat flour
  • 1/4 cup of peanut butter
  • 3 tablespoons of 100% pure maple syrup (plus more to taste)
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of ground cinnamon
  • 1/3 cup of dairy-free chocolate chips

Instructions:

  1. In a food processor, combine the drained and patted dry chickpeas, oat flour, peanut butter, 3 tablespoons of maple syrup, vanilla extract, salt, and ground cinnamon.
  2. Process the ingredients until a dough-like mixture forms. Taste and add more maple syrup if desired to achieve your preferred level of sweetness.
  3. Gently fold in the dairy-free chocolate chips, then pulse the mixture until the chips are evenly incorporated.
  4. Shape the mixture into bite-sized balls and place them on a rimmed baking sheet lined with parchment paper.
  5. Refrigerate the energy bites for at least 15 minutes to allow them to firm up.
  6. Transfer the energy bites to an airtight container and store them in the refrigerator for up to one week.
