Ingredients:
- 1 can (15 ounces) of chickpeas, drained, rinsed, and patted dry
- 1/3 cup of oat flour
- 1/4 cup of peanut butter
- 3 tablespoons of 100% pure maple syrup (plus more to taste)
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- 1/4 teaspoon of ground cinnamon
- 1/3 cup of dairy-free chocolate chips
Instructions:
- In a food processor, combine the drained and patted dry chickpeas, oat flour, peanut butter, 3 tablespoons of maple syrup, vanilla extract, salt, and ground cinnamon.
- Process the ingredients until a dough-like mixture forms. Taste and add more maple syrup if desired to achieve your preferred level of sweetness.
- Gently fold in the dairy-free chocolate chips, then pulse the mixture until the chips are evenly incorporated.
- Shape the mixture into bite-sized balls and place them on a rimmed baking sheet lined with parchment paper.
- Refrigerate the energy bites for at least 15 minutes to allow them to firm up.
- Transfer the energy bites to an airtight container and store them in the refrigerator for up to one week.
