Ingredients:
- 4 boneless, skinless chicken breasts
- 1 can (14 ounces) diced tomatoes (preferably with Italian herbs)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 4 cloves garlic, minced
- 1/2 cup pitted Kalamata olives, sliced
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Juice of 1 lemon
- Fresh parsley, for garnish
- Optional: Feta cheese crumbles for serving
Instructions:
- In a large mixing bowl, combine the diced tomatoes, sliced bell peppers, red onion, minced garlic, Kalamata olives, and sun-dried tomatoes. Mix well.
- Season the chicken breasts with dried oregano, dried basil, dried thyme, paprika, salt, and black pepper. Rub the seasoning into the chicken.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for about 2-3 minutes on each side until they are lightly browned. This step helps seal in the flavor.
- Place half of the tomato and vegetable mixture at the bottom of your slow cooker. Arrange the seared chicken breasts on top.
- Pour the remaining tomato and vegetable mixture over the chicken.
- Drizzle the lemon juice over the contents of the slow cooker.
- Cover and cook on low for 4-6 hours or until the chicken is cooked through and tender.
- Before serving, garnish with fresh parsley and, if desired, crumbled feta cheese.
- Serve your Mediterranean-inspired slow cooker chicken over cooked quinoa, brown rice, or whole wheat couscous for a complete and nutritious meal.
