Slow Cooker Mediterranean Chicken Breasts

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 can (14 ounces) diced tomatoes (preferably with Italian herbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 4 cloves garlic, minced
  • 1/2 cup pitted Kalamata olives, sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Fresh parsley, for garnish
  • Optional: Feta cheese crumbles for serving

Instructions:

  1. In a large mixing bowl, combine the diced tomatoes, sliced bell peppers, red onion, minced garlic, Kalamata olives, and sun-dried tomatoes. Mix well.
  2. Season the chicken breasts with dried oregano, dried basil, dried thyme, paprika, salt, and black pepper. Rub the seasoning into the chicken.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for about 2-3 minutes on each side until they are lightly browned. This step helps seal in the flavor.
  4. Place half of the tomato and vegetable mixture at the bottom of your slow cooker. Arrange the seared chicken breasts on top.
  5. Pour the remaining tomato and vegetable mixture over the chicken.
  6. Drizzle the lemon juice over the contents of the slow cooker.
  7. Cover and cook on low for 4-6 hours or until the chicken is cooked through and tender.
  8. Before serving, garnish with fresh parsley and, if desired, crumbled feta cheese.
  9. Serve your Mediterranean-inspired slow cooker chicken over cooked quinoa, brown rice, or whole wheat couscous for a complete and nutritious meal.
