Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tbsp garlic infused olive oil
- Zest and juice of 1 lemon
- 1/4 tsp red pepper flakes (optional/ as tolerated)
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F.
- In a bowl, combine shrimp, olive oil, garlic, lemon zest, lemon juice, red pepper flakes (if using), and season with salt and pepper. Toss to coat.
- Arrange shrimp in a single layer on a baking sheet lined with parchment paper.
- Bake for 5-6 minutes until shrimp are pink and cooked through.
- Remove from oven and sprinkle with chopped parsley.
- Serve immediately with lemon wedges and your choice of low FODMAP sides. Cauliflower rice or roasted potatoes work well.
