Ingredients:
- 1 cup oatmeal
- 2 scoops vanilla protein powder
- 1 banana, mashed
- 1 egg
- 1/2 cup milk of choice
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp vanilla extract
- Optional toppings: fresh fruit, maple syrup, nut butter
Instructions:
- In a medium bowl, mix together the oatmeal, protein powder, mashed banana, egg, milk, cinnamon, baking powder and vanilla until well combined. The batter should be thick but pourable. If you’d rather not have the oat texture you can blend the batter.
- Heat a skillet or griddle over medium heat. Lightly coat with cooking spray or butter.
- Scoop the batter onto the skillet using about 1/4 cup batter per pancake. Cook until bubbles start to form on the top, then flip and cook for another 1-2 minutes until golden brown.
- Serve pancakes warm, topping with fresh fruit, a drizzle of maple syrup or nut butter if desired.
Make ahead tip: The dry ingredients can be mixed together the night before. In the morning, just add the wet ingredients and mix before cooking.
