Healthy Blended Chocolate Baked Oatmeal

Ingredients:

  • 1/2 cup oats (rolled or quick oats)
  • 1/2 cup unsweetened applesauce
  • 1 large egg
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • Chocolate chips, as desired

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a ramekin with a small amount of oil or cooking spray.
  2. In a mixing bowl, combine the oats, unsweetened applesauce, egg, maple syrup, and vanilla extract. Mix well until all ingredients are fully combined.
  3. Add the baking soda and salt to the mixture, and stir until incorporated.
  4. Divide the batter in half. To one half, add the unsweetened cocoa powder and mix until the cocoa is evenly distributed.
  5. If desired, fold in chocolate chips into either or both halves of the batter.
  6. Pour one portion of the batter into the greased ramekin. Then add the cocoa-infused portion on top of it.
  7. Use a spoon to gently swirl the two batters together to create a marbled effect.
  8. Bake in the preheated oven for about 20-25 minutes, or until the oatmeal is set and a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the baked oatmeal cool for a few minutes before serving.
