Ingredients:
- 1/2 cup oats (rolled or quick oats)
- 1/2 cup unsweetened applesauce
- 1 large egg
- 1 tablespoon pure maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon unsweetened cocoa powder
- Chocolate chips, as desired
Instructions:
- Preheat the oven to 350°F (175°C). Grease a ramekin with a small amount of oil or cooking spray.
- In a mixing bowl, combine the oats, unsweetened applesauce, egg, maple syrup, and vanilla extract. Mix well until all ingredients are fully combined.
- Add the baking soda and salt to the mixture, and stir until incorporated.
- Divide the batter in half. To one half, add the unsweetened cocoa powder and mix until the cocoa is evenly distributed.
- If desired, fold in chocolate chips into either or both halves of the batter.
- Pour one portion of the batter into the greased ramekin. Then add the cocoa-infused portion on top of it.
- Use a spoon to gently swirl the two batters together to create a marbled effect.
- Bake in the preheated oven for about 20-25 minutes, or until the oatmeal is set and a toothpick inserted into the center comes out clean.
- Remove from the oven and let the baked oatmeal cool for a few minutes before serving.
