Low FODMAP Italian Meatballs

Ingredients:

  • 1 pound extra lean ground beef
  • 1 small green onion (green tops only), finely chopped
  • ½ cup gluten-free bread crumbs
  • ⅓ cup non-dairy milk (such as almond or rice milk)
  • ¼ cup grated Parmesan cheese (while it is considered low fodmap, ensure it’s suitable for your tolerance)
  • 1 ½ tablespoons Worcestershire sauce (ensure it’s garlic and onion-free)
  • 1 ½ teaspoons Italian seasoning
  • ¾ teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (adjust to taste)
  • ½ teaspoon sea salt
  • ½ teaspoon garlic-infused oil
  • 1 dash hot pepper sauce, or to taste

Directions:

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Place ground beef, green onion tops, gluten-free bread crumbs, lactose-free milk, Parmesan cheese, Worcestershire sauce, Italian seasoning, oregano, red pepper flakes, salt, and garlic-infused oil into a large bowl. Mix until evenly combined.
  3. Shape the mixture into 12 meatballs and place them onto a baking sheet.
  4. Bake in the preheated oven until no longer pink in the center, 20 to 25 minutes.

NOTE: Using almond flour instead of bread crumbs will make this recipe keto friendly also.
